Lazy Dog occupies a category that Las Vegas does not have a deep bench in: the full-service comfort-food chain built for volume, open late, priced for a Tuesday. The poblano pork is the dish worth building an order around, a plate that leans on roasted chile heat against a fattier cut, the kind of thing that reads as a kitchen trying to give a chain menu a point of view rather than defaulting to the burger. The burgers are still the anchor, and on a menu this broad that is the right call: a chain kitchen that tries to do ten cuisines well usually does none of them well, and Lazy Dog's approach reads as picking a lane, American comfort plates with a few Southwestern and Asian-leaning detours, and running it at scale.
