The cuisine is Cantonese-rooted, and the format is a formal one: har gow, siu mai, and char siu bao as the anchors, ordered at the table rather than flagged down from a passing trolley.

The har gow is the honest test of any dim sum kitchen. Thin skin, clean pleats, shrimp that holds its snap, this is the dish that tells the room's story, and at Hakkasan it draws consistent attention as the standard-bearer. The siu mai runs alongside it: pork and shrimp, open-topped, the kind of dumpling that separates careful kitchens from careless ones.
